Swiss Roll


Made these yummy & easy Roll cake yesterday
Recipe adapted from here , thanks to MamaFami

Swiss Roll(10" square pan)
(A)
3 nos eggs
2 oz castor sugar
1/2 teaspoon baking powder
1 teaspoon vanilla essence
1/2 tablespoon ovallette
1.5 oz flour
1/2 tablespoon milk powder
(B)
2 oz butter ~ melted
(C)
a few drops of red food coloring  
(D)
Buttercream icing & Blueberry Filling
Method :
1. Place ingredients A in a mixing bowl. Beat on high speed for 5 to 7 minutes.
2. Set aside 2 tablespoon of the batter and put into 1 piping bag with a few drops red food coloring. Mix well.
3. Spread the batter onto the tray layered with greaseproof paper.
4. Pipe lines using the red colored batter onto the white batter.  Using a toothpick, make lines across the red batter to create batik effect
5. Bake in a preheated oven at 170 C for 20 minutes. (I baked for 12 mins coz I'm using 12" cake pan)
6. Once baked, remove the cake from the tray onto a wire rack. Let it cool.
7. Turn the cake onto another piece of paper(I used Kitchen Towel) and spread the buttercream & blueberry filling
8. Slowly and carefully, roll the cake. Wrap in a clingfilm and keep in the refrigerator for the buttercream to set before slicing it.

Happy Birthday Tg Nur Mia Iman

Made this cake for my beloved Mia
How fast time flies she's now 5 years already.
It seem like yesterday that I'm holding her in my arm and now she has growing up to a beutiful child......no matter how she will always be my baby
Ok back to the cake, had promised her that I will make cake for her and last week my project begins....
The cake was red velvet recipe and I modified a little bit just to accommodate the rainbow theme colour and because this the first time I tried making a skirt with this recipe ,the cake was not high enough to essemble it and Alhamdullilah my good baking friend,Zarina has some leftover buttercake and she was kind enough to give to me so that I can stack it on top of my rainbow cake.
I make 2 size cake layer.Bake 4 layers of 7 inch cake and 3 layers of 6 inchs cake and the filling is blueberry and buttercream.Then to secure the cake I had inserted the dowel rod.
 
This is how I carved the cake to make the doll skirt.After that just decorate it with buttercream.....
My way of decorate the dool skirt is:
1- fill up the buttercream into the piping bag then snip end of the bag.
2-begin from the bottom of the cake board press the icing bag by circling around the cake until it covered the entire cake.
3-then using a small spatula by running edge of spatula from bottom to the top to form folds.
4-insert the doll pick in the cake(the doll may be decorate by using fondant or buttercream) ...for this cake I used fondant to make the bodice.
5-then just use your imiginations to complete the decorations.

Recipe for Rainbow Cake(adaptation from Red Velvet cake)
Red Velvet CupcakesIngredients:
(A)
300g plain flour
2 tbsp corn flour
2 tspn baking powder
1 tspn salt

(B)
125g unsalted butter( I used Tatura unsalted butter)
260g castor sugar

(C)
2 eggs(A grade)

(D)
1tspn vanilla essence

(E)
1 tspn white vinegar
1 tspn bicarbonate of soda

(F)
240ml Buttermilk (if you can't find the buttermilk just use 240ml evoporated milk & add 1 tspn of lemon juice or white vinegar & let it stands for 15 mins)
colours of the rainbow-red,pink,orange,yellow,green blue & violet
Methods:
1-Preheat oven to 180C
2-Sift (A) & set aside
3-Cream (B) until light & fluffy.Add (C) one at time,mixing well after each addition.
4-Blend in (D)
5-Altenately add flour mixture & buttermilk and beat until batter is smooth.
6-then add the vinegar & soda bicarbonate let it fizz and fold it into the batter.
7-divide the batter into 7 colours of rainbow(I used 4 colours with 7" cake pan and 3 colours with 6" cake pan
8-Bake for 20 - 25 mins.

I was pleased to know that Mia loved the cake very much....hilang penat terkejar-kejar kat dapur and attending my little baby at the same time.

Tiramisu

Assalamualaikum.... & hi to everyone....

Yeay my 60  days confinement period end today...phew...
My hand start itchy to bake something delectable & sweet thing just to satisfy my cravings..ha..ha..
And to begin with... I made this simple Tiramisu ....

I used chocolate sponge cake...cut into 3 layers & soaked it with nescafe .
For the cream ,I used cream cheese,icing sugar ,whipping cream & vanilla essence-beat the cream cheese till smooth then add all the ingredients and beat again till it become soft peak.
To assemble it take 1 layer of sponge cake then spread the cream cheese & repeat the process till the end.Chill in the fridge for several hours

My Sweet Little Munchkin


I would like to introduce my little sweetmunchkin..... Aishah Binti Mohamad sufian,safely delivered on 19-12-2011 @ 9.44am at Colombia Asia ,Puchong....

Alhamdullilah I had been blessed with super fast easy delivery.....Syukur. Before that ,once again Syukur ke Hadrat Illahi I had an easy and healthy pregnancy. The baby grew right on schedule, my pee sticks were always the right colour, the placenta was in a great anterior position, my blood pressure was normal throughout, Alhamdulillah. Sure, I had morning sickness, swelling, sciatic pain, terrible backache… but we(me & the baby) were healthy. That’s all that mattered.


This is Aishah on the 6th days....has been diagnosed with Neonatal Jaundice.... and once again me & my sweet munchkin has been addmitted at Colombia Asia Hospital for 2 days....

Aishah on the 11th days......my son has been with my mother at Kampung and me Insyallah will back to Perlis for the confinement on 1st Jan 2012....

So ,just to inform...Cake2u officially closed for a couple of months....

Gumpaste recipe

As Salam & Hi to everyone.....
In my previous post I've promised to share the gumpaste recipe & here it is....
before that I sourced the recipe from here ... Thanks to Kak Min from Baking Project...

Ingredients
500 g icing sugar
1 tablespoon gum tragacanth
1 1/2 tablespoon cold water
2 teaspoon powdered gelatine
2 teaspoon liquid glucose
1 tablespoon shortening
1 egg white
Method :
Mix the icing sugar with the gum trag, and sieve. Put in a heavy duty mixer bowl.
Sprinkle the gelatine over the water, and wait until it becomes spongy. Then double boil until it turns into liquid again. Add the glucose, stir until it turns liquid too, then add in the shortening . Continue stirring until all are melted.
Remove from heat. Pour into the icing sugar, and mix in the egg white. Beat until the paste becomes white and elastic. Remove the gumpaste, put in an airtight container and let it rest for at least 12 hours before using.
Have been using this recipe since last year.....
  
Sometimes when I'm so lazy I will opted to another version of gumpaste or modelling paste which is I'll mix the fondant with the CMC powder or Gum Tragacanth...simple & easy but the drying process takes time and if there's raining season the flowers made of this simple gumpaste tends to wilt eventhough the previous day the flowers already dried....
But the above recipe is worth to try because no matter the weather is , Insyaallah your flowers will not wilted at all(based on my experience)......

Rose that I did using the above recipe & it completely dried within 24 hrs....inspired by Peggy Porshen's style...but my rose still far from perfect as her , need more practice...

The size of  petal rose cutter that I've been using is 3.5cm & 4.5 cm....

Maz & Khoir

As Salam & Hi to all
Made these cuppies for my ERL buddy Maz, the wedding receptions was held yesterday at Banting.....congratulations Maz & Khoir....Semoga berbahagia hingga ke akhir hayat ..Amin


I'm so frustrated with the fondant ....did you see that the fondant looks so shining?yup...lembik ...nak buat macam mana kalau musim hujan  memang akan experience kes macam nie...but the flowers that I made with gumpaste(nanti I share the gumpaste recipe ya) turns out really okay, not wilted at all.... hmm... nasib baik Maz faham....

I think maybe this will be my last project before I deliver..he..he..ya ka, now I'm in 36 weeks of my pregnancy....hopefully everything will be okay ..Insyallah...
