My Brother's Day

Asslamualaikum....
Just to share the things that I've done for my brother's wedding day which was held at my kampung ,Chuping ,Perlis on 17 March 2012.

I have been commissioned by my Mak to do wedding favour and with that I made these Chocolate Chip Muffins.Altogether 1000pcs....phew...soo tiring ,alhamdullilah my maksu & her daughter in-law gave their hands on it...kalau tak terkelepet lah cik nurul sensorang taw...he..he..I used Nigella Lawson recipe and it was so yummy and the preparations to make the muffin is easy but the bored part is to wait an array of trays masuk dalam oven my mak yang dah dihujung nyawa gitu....ahaks....

Simple packaging....bab packaging ni saya mmg surrender....yang ni my nieces and nephew tolong buatkan....

 My mak's oven....sangat berjasa...she has served my mak for almost 20 years....dan sekarang tempreture dia mmg dah out....imagine for these muffins the original recipe stated 180Celcius for baking process but here I've to put 50Celcius only....terlampau panas..muhaha..tapi at least oven nie lah mak saya buat berniaga untuk bantu ayah saya membesarkan kami semua..hu..hu...

Tepak Sireh cake for hantaran- my ayah selama 2 malam berturut-turut temankan saya menyiapkan cake ni and sambil tu layan lagu keroncong ha..ha..

 Wedding cake that I made for my brother...true story he..he...I only decorated the cake with buttercream but the cake was baked by my baking friend,kak Nina .... ha..ha.. bukan apa,my mak's oven dah bengong sebab dah bakar 1000pcs++ muffins so nak tak nak terpaksa minta kak Nina tolong buatkan...nasib bak kak Nina sanggup buat..last minute punya order....dia pun kata kalau decorated cake dia tak sanggup tapi because cake saja...tu yang dia buatkan juga...thanks kak..(gambar tu bukan dari camera saya, my cousin yang ambik)
My adik with his bride.....Selamat pengantin baru Syah & Yanti....Semoga berbahagia hingga keakhir hayat...Amin.

Kek Tepak Sireh



 
Made this cake for my brother's wedding gift a.k.a hantaran
The cake was Tesco fruit cake..he..he...cheating....I didn't have time to bake the cake and to make it easy I just bought it...senang cerita...I just decorate the cake with my homemade fondant.....
I didn't bring much of my decorating stuff and I just used what ever available at my Mother's pantry...
The daun Sireh was made from fondant which I used real daun sireh to get the leaf effects then I dust it with edible moss green colour powder.
The roses and the leaf was made using peggy porshen method which doesn't use any cutter.
Only the bunga pinang I used the real one and the rest is totaly made from fondant.
Everyone was terkejut when my mother told them it was a cake...he..he...berbaloi bersenkang mata selama 2 hari menyiapkan kek ni...almaklumlah time umar and Aishah tidur baru boleh decorate the cake...ok later I will upload more picture on my brother's wedding day...

Red Velvet Cake

Made this Red Velvet cake for my good friend ,Siti Zuraidah ..she pay me a visit with her family today and dah lama tak jumpa dia and last time we meet was last year when she gave birth to her 3rd child..... hmm almost 1 year he..he...we both now venture into same occupations, Domestic Engineer he..he..bukan senang taw nak dapat kerja nie...suami izinkan baru dapat..
Ok back to the cake I used new recipe for cream cheese frosting and it was really delicious and without feeling any guilt I have 2 slices....muhaha..yummy..yummy and even Umar finished 1 slice cake by himself...

Red Velvet Cake 
Sources : Kitchen Guardian
Ingredients
(A)
125g butter
180g caster sugar
1 tsp vanilla extract
(B)
2 eggs
(C)
225g plain flour
2 tbsp cornflour
2 tbsp cocoa powder
(D)
250ml buttermilk ( I used 250ml evoporated milk and add 1 tsp of white distlled vinegar and let it stands for 15 mins)
1 tbsp red food colouring
(E)
1 tspn bicarbonate soda
1 tsp distilled vinegar

Method:
1-preaheat oven at 170Celcius.Grease two 8" cake pans
2- Beat (A) until light and fluffy and (B)
3-Stir in (C) and altenate with (D) in two batches
4-Combine vinegar & bicabonate soda and let it fizz,and then fold in the cake mixture
5-Divide the batter into  two pans,and bake for 30 minutes

Cream cheese frosting
400g cream cheese
200 ml whipping cream
110g icing sugar
1 tsp vaniila extract

method:
1-Beat Cream cheese until smooth
2-add vanilla and icing sugar and beat till smooth
3-then add whipping cream and whip until frosting is thick enough to spread.Add more sugar or cream as needed to get the right consisteny...

yum...yum....hmmm heaven...

Peach Cake for my BFF

Made this yummy easy peasy Peach Cake for my BFF .....NorInsyirah Osman,kira kata this is 1st time I've made dessert yang ala-ala Continental cake...
Actually my plans was to make Red Velvet cake with special cream cheese & mascarporne frosting but unfortunately some of the ingredients tak dak(mati-mati saya ingat all bahan2 ada,so rileks ja tak pi beli baru....bila nak buat baru mengelabah muhahaha) ,maka terbatal lah niat suci murni saya tu hu..hu..hu...then saya masuk pantry a.k.a baking room saya dok termenung memikir what kind of cake saya nak buat kat BFF saya ni...then aha...idea pun datang coz saya ternampak satu tin buah Peach yang lagi 3 bulan nak expire... ngeee...maka terlaksana lah misi Peach Cake ni...(luckily I have Whipping cream :D )

Simple decorations....bake the sponge cake on 10.30pm(ni kes my kiddies dah tidur baru boleh bake) and decorate the cake on 7am the next day ....My BFF nak mai awal rumah saya tu yang kena decorate awal...nasib baik juga Umar & baby Aishah tak bangun tidur lagi..phew...macam lipas kudung menyiapkan cake dan juadah sampingan(meehoon goreng ja he..he..)..

The cake turns out really yummy and my BFF have 2 servings ....
Recipe ??? nanti ya saya bagi...baby saya nangis he..he..nanti sambung lagi...

Basic Sponge cake
(Makes 2 or 3 layers 8" round)

INGREDIENTS:
4 Eggs
80g Plain Flour - sifted
3/4 tbsp Emulsifier
2 tbsp Water
60g Caster Sugar
5ml Corn Oil
METHOD:
1. Place all ingredients, except oil, in a mixer.
Whisk high speed until thick.
Lower the speed, add in oil.


2. Pour into lined & greased tin.
Bake 180C for 25-30 min until cooked.
Remove from tin & cool on a wire rack.

3. Slice the cake into 2 or 3 equal layers.

-400 ml whipping cream non-diary Rich Gold-whipped
-1 can peach -reserved syrup and 12 slices peaches for decorations ,chopped the peaches for filling -divede into 2 portions

to assemble:
1-cut sponge cake into 3 layers
2-brush each layer cake with peach syrup 
3-Take 1 layer cake and spread a small amount of whipped cream then put 1 portion of chopped peaches.Top with another slice of cake and reapeat the same process.
4-Top with the last slice of cake then spread whipped cream all over the cake.
5-Arrange the slice peaches and with some chocolate curls.

Malt Cookies

Buat cookies ni untuk habiskan stok horlick yang ada sapa tak nak minum...suami saya tak berapa suka dgn Horlick,minum pun kadang-kadang ja dan saya minum ho..ho..ho..horlicks nie masa pregnant ja...jadi daripada rosak baik saya buat sesuatu...dan tengok dalam pantry ada sunflower & pumpkin seed maka idea nak mengookies pun tiba he..he..he..
Resepi saya ambil kat majalah Australia Women's Weekly,saya ubah sikit ikut stok barang yang saya ada...

Malt Cookies(menghasilkan 50 keping)
Bahan-bahan
(A)
1 cawan Butter
1 1/2 cawan gula castor(saya letak 3/4 cawan ja)
2 camt essence vanilla

(B)
2 biji telur(size A)

(C)(ayak)
2 camb susu pekat (saya letak 2 camb susu tepung)
2 1/2 cawan tepung gandum
1/2 camt soda bikarbonate
3/4 cawan Malt milk powder(saya guna Horlicks)

(D)
1 cawan pumkin & sunflower seeds(dalam original resepi letak 1 cawan choc chip tapi saya letak biji-bijian tu..he..he..  )

Method:
1-Pukul (A) sampai kembang
2-Masukkan telur satu persatu,pukul hingga sebati
3-Masukkan tepung sedikit demi sedikit dan kacau dgn senduk kayu
4-Masukkan pumkin & sunflower seeds dan kacau sebati
adunan lembik macam buat drop cookies ,saya bulat-bulatkan sebesar ibu jari dan letak atas dulang membakar dan kemudian tekan dgn belakang sudu untuk menipiskan cookie.
5-Bakar pada suhu 160C fan force oven atau 180C selama 20 minits(bergantung pada oven masing-masing)

***Cookies ni sangat ranggup dan sedap ...Encik suami tak tahu pun yang saya letak horlick kat dalam tu..ho..ho...ho.. at last habis juga horlickku itu...

Kek Alunan Kasih

Kek Alunan Kasih....

Dah lama teringin nak buat dan semalam saya buat untuk kawan saya ,Nor sebagai menghargai jasa beliau menolong saya dalam masa berpantang ....harap Nor suka ya...
Kek ni sedap pada saya kerana rasanya yang lemak manis dan keistimewaan kek ini terletak pada lapisan koko dan jaluran beralun yang memisahkan setiap lapisan kek itu.....
Terima kasih pada pemilik resepi Puan Mastura Yasak(FB)...saya ambil resepi ni blog yang fames he..he..siapa lagi kalau bukan Che Mat Gebu

BAHAN-BAHANNYA :-)
5 biji telur gred "A"
250 gram mentega(saya guna Anchor salted)
2 1/2 cawan tepung gandum*
1 camca teh baking powder*(*disatukan dan diayak)
1 1/2 cawan gula halus
1 cawan susu cair (saya letak 1/2 cawan ja)
Serbuk koko secukupnya
1 st Vanilla Essence
Pewarna makanan pink,orange dan biru

CARA MEMBUATNYA :-)
  1. Panaskan oven pada suhu 175C, lenser acuan berukuran 8 inci x 8 inci x 3 inci dengan mentega dan alas dasarnya dengan kertas minyak. Lenser juga kertas tadi. Ketepikan.
  2. Putar mentega dengan gula halus hingga berkrim, masukkan telur satu persatu dan terus memutar hingga kembang. Masukkan susu cair dan esen vanilla, putar sebati.
  3. Pada kelajuan perlahan, masukkan tepung sedikit demi sedikit hingga habis, gaul rata. Bagi adunan tadi kepada 3 bahagian dan setiap bahagian tadi diberi pewarna. Kacau rata untuk setiap bancuhan.
  4. Tuang 1 bahagian dalam tin kek tadi, ratakan (terpulang pada anda nak guna bancuhan yang mana satu dulu). Kemudian ayak serbuk koko atas bancuhan pertama tadi, rata2. Tuang pulak 1 bahagian lagi, perlahan2 ratakan. Ayak lagi serbuk koko rata2 dan tuang bahagian terakhir, ratakan.
  5. Bakar selama 45 minit atau hingga masak, yang ni bergantung pada oven masing yea. Bila kek masak, sejukkan sekejap dan keluarkan dari tin, sejukkan sepenuhnya atas jaringan sebelum dihidangkan...

Wedding Cookies untuk Siti Nazira

 Saya buat cookies ni sebagai tanda ingatan dan hadiah buat seorang adik ditempat kerja lama saya.Majlis berlangsung semalam.
Sebelum ni dia ada minta saya buatkan wedding cake dan cookies utk wedding favor tapi saya terpaksa menolak atas kenkangan waktu dan tenaga...yelah dah ada baby kechik ni saya terpaksa surrender awal-awal...
Tapi dalam hati saya dah bertekad untuk buatkan cookies special untuk dia...dan inilah hasil nya


Simple design ja....
Saya buatkan cookies perasa vanilla dan saya hiaskan dengan royal icing perasa mint...saya letak dalam clear box dan ikat dengan benang organik....simple aja..he..he..saya tak sempat nak kelaur untuk beli kotak yang menarik...

Untuk cookies pengantin tu saya gunakan template yg saya buat sendiri dari kertas...tekap pada adunan dan potong....
Ingat nak buatkan step-step cara buat cookies pengantin tu ...mmg tak boleh sebab saya terkejar-kejar dgn baby menangis..hu..hu..maybe next time saya buatkan tutorial ya...

Secara peribadi saya tak berapa puas hati dengan hasil kerja saya kali ni...comot semacam aja...tapi saya harap Iera suka dengan pemberian saya ni...Selamat Pengantin Baru ya...Semoga berkekalan hingga ke akhir hayat...AMIN...
